The Australian sausage market was finally on the rise to reach $X in 2021, after four years of decline. Overall, consumption, however, saw a pronounced descent. As a result, consumption attained the peak level of $X. From 2017 to 2021, the growth of the market failed to regain momentum.

For the third year in a row, Australia recorded growth in shipments abroad of sausages and similar products of meat, which increased by 23% to X tons in 2021. The total export volume increased at an average annual rate of +1.6% from 2012 to 2021; however, the trend pattern indicated some noticeable fluctuations being recorded in certain years. As a result, the exports reached the peak and are likely to continue growth in the immediate term.
In value terms, sausage exports surged to $X in 2021. Overall, exports continue to indicate a relatively flat trend pattern. The growth pace was the most rapid in 2014 when exports increased by 22%. The exports peaked in 2021 and are expected to retain growth in the near future.

New Zealand (X tons) was the main destination for sausage exports from Australia, accounting for a 36% share of total exports. Moreover, sausage exports to New Zealand exceeded the volume sent to the second major destination, Solomon Islands (X tons), threefold. Papua New Guinea (X tons) ranked third in terms of total exports with a 12% share.

From 2012 to 2021, the average annual rate of growth in terms of value to New Zealand stood at +4.5%. Exports to the other major destinations recorded the following average annual rates of exports growth: Papua New Guinea (-3.2% per year) and Taiwan (Chinese) (+28.7% per year).

The average sausage export price stood at $X per ton in 2021, with a decrease of -5.7% against the previous year. In general, the export price showed a slight decrease. The most prominent rate of growth was recorded in 2018 when the average export price increased by 19%. Sausage imports into Australia shrank to X tons in 2021, which is down by -14.9% compared with the year before. Over the period under review, imports recorded a relatively flat trend pattern. The growth pace was the most rapid in 2014 with an increase of 57%. Over the period under review, imports reached the peak figure at X tons in 2015; however, from 2016 to 2021, imports failed to regain momentum.
In value terms, sausage imports rose slightly to $X in 2021. In general, total imports indicated a tangible expansion from 2012 to 2021: its value increased at an average annual rate of +3.8% over the last nine-year period. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2021 figures, imports increased by +75.6% against 2013 indices. The growth pace was the most rapid in 2017 with an increase of 17%. Over the period under review, imports reached the peak figure in 2021 and are expected to retain growth in the near future.
Imports by Country
New Zealand (X tons), the United States (X tons) and the Netherlands (X tons) were the main suppliers of sausage imports to Australia, with a combined 82% share of total imports. These countries were followed by China, Canada, South Korea and Germany, which together accounted for a further 16%.
From 2012 to 2021, the most notable rate of growth in terms of purchases, amongst the main suppliers, was attained by Canada (with a CAGR of +79.4%), while imports for the other leaders experienced more modest paces of growth.
In value terms, the largest sausage suppliers to Australia were the United States ($X), New Zealand ($X) and the Netherlands ($X), together comprising 75% of total imports. China, Canada, South Korea and Germany lagged somewhat behind, together comprising a further 23%.
Canada, with a CAGR of +94.0%, saw the highest growth rate of the value of imports, in terms of the main suppliers over the period under review, while purchases for the other leaders experienced more modest paces of growth.

The average sausage import price stood at $X per ton in 2021, increasing by 20% against the previous year. In general, import price indicated a noticeable expansion from 2012 to 2021: its price increased at an average annual rate of +4.3% over the last nine-year period. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2021 figures, sausage import price increased by +18.9% against 2018 indices. The most prominent rate of growth was recorded in 2018 when the average import price increased by 22% against the previous year. Over the period under review, average import prices hit record highs in 2021 and is expected to retain growth in the near future.
There were significant differences in the average prices amongst the major supplying countries. In 2021, amid the top importers, the country with the highest price was Canada ($X per ton), while the price for New Zealand ($X per ton) was amongst the lowest.
