For the third consecutive year, the Central Asian sausage market recorded growth in sales value, which increased by 4.7% to $X in 2021. The market value increased at an average annual rate of +2.0% from 2012 to 2021; the trend pattern remained relatively stable, with somewhat noticeable fluctuations throughout the analyzed period. Over the period under review, the market reached the maximum level in 2021 and is expected to retain growth in years to come.

The total output value increased at an average annual rate of +1.9% over the period from 2012 to 2021; the trend pattern remained consistent, with somewhat noticeable fluctuations being recorded in certain years. Sausage exports expanded markedly to X tons in 2021, increasing by 11% compared with 2020. Overall, exports showed buoyant growth. The pace of growth appeared the most rapid in 2014 when exports increased by 164%. Over the period under review, the exports hit record highs at X tons in 2018; however, from 2019 to 2021, the exports failed to regain momentum.
In value terms, sausage exports expanded slightly to $X in 2021. Over the period under review, exports continue to indicate significant growth. The pace of growth was the most pronounced in 2014 with an increase of 355% against the previous year. Over the period under review, the exports attained the maximum at $X in 2018; however, from 2019 to 2021, the exports stood at a somewhat lower figure.
Exports by Country
Kyrgyzstan represented the key exporting country with an export of around X tons, which resulted at 76% of total exports. Kazakhstan (X tons) ranks second in terms of the total exports with a 16% share, followed by Uzbekistan (5.5%). Mongolia (X tons) held a minor share of total exports.
From 2012 to 2021, average annual rates of growth with regard to sausage exports from Kyrgyzstan stood at +19.3%. At the same time, Mongolia (+68.6%), Uzbekistan (+60.2%) and Kazakhstan (+24.4%) displayed positive paces of growth. Moreover, Mongolia emerged as the fastest-growing exporter exported in Central Asia, with a CAGR of +68.6% from 2012-2021. While the share of Kyrgyzstan (+13 p.p.), Kazakhstan (+6.8 p.p.), Uzbekistan (+5.5 p.p.) and Mongolia (+2.6 p.p.) increased significantly, the shares of the other countries remained relatively stable throughout the analyzed period.
In value terms, Kyrgyzstan ($X) remains the largest sausage supplier in Central Asia, comprising 60% of total exports. The second position in the ranking was held by Kazakhstan ($X), with a 24% share of total exports. It was followed by Uzbekistan, with a 12% share.
In Kyrgyzstan, sausage exports expanded at an average annual rate of +33.8% over the period from 2012-2021. The remaining exporting countries recorded the following average annual rates of exports growth: Kazakhstan (+25.0% per year) and Uzbekistan (+73.0% per year).
Export Prices by Country
The export price in Central Asia stood at $X per ton in 2021, dropping by -8.1% against the previous year. Over the period under review, the export price, however, posted a moderate increase. The pace of growth appeared the most rapid in 2014 when the export price increased by 72% against the previous year. As a result, the export price attained the peak level of $X per ton. From 2015 to 2021, the export prices remained at a lower figure.
Prices varied noticeably by country of origin: amid the top suppliers, the country with the highest price was Uzbekistan ($X per ton), while Kyrgyzstan ($X per ton) was amongst the lowest.
From 2012 to 2021, the most notable rate of growth in terms of prices was attained by Kyrgyzstan (+12.1%), while the other leaders experienced more modest paces of growth.

In 2021, purchases abroad of sausages and similar products of meat increased by 22% to X tons, rising for the fourth year in a row after four years of decline. The total import volume increased at an average annual rate of +1.6% from 2012 to 2021; however, the trend pattern indicated some noticeable fluctuations being recorded throughout the analyzed period. As a result, imports attained the peak and are likely to continue growth in the immediate term.

Imports by Country
Kazakhstan dominates imports structure, reaching X tons, which was approx. 92% of total imports in 2021. It was distantly followed by Tajikistan (X tons), creating a 4.6% share of total imports.
Kazakhstan was also the fastest-growing in terms of the sausages and similar products of meat imports, with a CAGR of +3.6% from 2012 to 2021. Tajikistan (-4.1%) illustrated a downward trend over the same period. While the share of Kazakhstan (+15 p.p.) increased significantly in terms of the total imports from 2012-2021, the share of Tajikistan (-3.1 p.p.) displayed negative dynamics.
In value terms, Kazakhstan ($X) constitutes the largest market for imported sausages and similar products of meat in Central Asia, comprising 90% of total imports. The second position in the ranking was taken by Tajikistan ($X), with a 4.9% share of total imports.
From 2012 to 2021, the average annual growth rate of value in Kazakhstan totaled +2.1%.
Import Prices by Country
In 2021, the import price in Central Asia amounted to $X per ton, picking up by 14% against the previous year. Over the period under review, the import price, however, showed a relatively flat trend pattern. The most prominent rate of growth was recorded in 2017 an increase of 29% against the previous year. Over the period under review, import prices attained the peak figure at $X per ton in 2013; however, from 2014 to 2021, import prices remained at a lower figure.
Average prices varied noticeably amongst the major importing countries. In 2021, amid the top importers, the country with the highest price was Tajikistan ($X per ton), while Kazakhstan stood at $X per ton.
