In 2021, Lithuania (X tons), Poland (X tons) and Latvia (X tons) represented the largest exporter of caviar (sturgeon) in Eastern Europe, committing 79% of total export. It was distantly followed by the Czech Republic (X tons) and Bulgaria (X tons), together making up a 15% share of total exports. Russia (X tons) held a little share of total exports.
From 2012 to 2021, the most notable rate of growth in terms of shipments, amongst the main exporting countries, was attained by the Czech Republic (with a CAGR of +118.3%), while the other leaders experienced more modest paces of growth.
In value terms, Poland ($X) remains the largest caviar (sturgeon) supplier in Eastern Europe, comprising 52% of total exports. The second position in the ranking was held by Latvia ($X), with a 16% share of total exports. It was followed by Bulgaria, with a 9% share.

Imports in Eastern Europe
In 2021, approx. X tons of caviar (sturgeon) were imported in Eastern Europe; falling by -2% compared with the previous year. Overall, imports, however, continue to indicate prominent growth. The pace of growth was the most pronounced in 2013 when imports increased by 57% against the previous year. The volume of import peaked at X tons in 2016; however, from 2017 to 2021, imports failed to regain momentum.
In value terms, caviar (sturgeon) imports skyrocketed to $X in 2021. In general, imports, however, continue to indicate a remarkable increase. The most prominent rate of growth was recorded in 2018 with an increase of 43%. The level of import peaked in 2021 and is expected to retain growth in years to come.

In 2021, Latvia (X tons), Lithuania (X tons) and Bulgaria (X tons) represented the largest importer of caviar (sturgeon) in Eastern Europe, generating 71% of total import. Russia (X tons) took a 9.1% share (based on physical terms) of total imports, which put it in second place, followed by Poland (5.3%), Ukraine (5%) and the Czech Republic (4.7%).
From 2012 to 2021, the most notable rate of growth in terms of purchases, amongst the main importing countries, was attained by Ukraine (with a CAGR of +80.9%), while imports for the other leaders experienced more modest paces of growth.
In value terms, the largest caviar (sturgeon) importing markets in Eastern Europe were Russia ($X), Latvia ($X) and Ukraine ($X), with a combined 61% share of total imports.
In terms of the main importing countries, Ukraine, with a CAGR of +43.5%, recorded the highest rates of growth with regard to the value of imports, over the period under review, while purchases for the other leaders experienced more modest paces of growth.
