In 2022, after two years of decline, there was growth in the EU fresh pork cut market, when its value increased by 3.2% to $X. Over the period under review, consumption saw a relatively flat trend pattern. As a result, consumption attained the peak level of $X. From 2020 to 2022, the growth of the market remained at a somewhat lower figure.
Fresh Pork Cut Production in the EU
In value terms, fresh pork cut production contracted to $X in 2022 estimated in export price. In general, production, however, saw a relatively flat trend pattern. The most prominent rate of growth was recorded in 2019 when the production volume increased by 21%. As a result, production reached the peak level of $X. From 2020 to 2022, production growth remained at a lower figure.
The countries with the highest volumes of production in 2022 were Germany (X tons), Spain (X tons) and Denmark (X tons), together comprising 53% of total production. Italy, France, Poland and the Netherlands lagged somewhat behind, together comprising a further 39%.
From 2012 to 2022, the biggest increases were recorded for Poland (with a CAGR of +2.9%), while production for the other leaders experienced more modest paces of growth.

Exports in the EU
In 2022, approx. X tons of fresh or chilled hams, shoulders and cuts of pig meat were exported in the European Union; dropping by -5% against 2021. In general, exports continue to indicate a perceptible downturn. The growth pace was the most rapid in 2021 when exports increased by 5.3% against the previous year. Over the period under review, the exports hit record highs at X tons in 2015; however, from 2016 to 2022, the exports stood at a somewhat lower figure.
In value terms, fresh pork cut exports rose slightly to $X in 2022. Over the period under review, exports saw a perceptible descent. The pace of growth appeared the most rapid in 2017 with an increase of 12% against the previous year. The level of export peaked at $X in 2013; however, from 2014 to 2022, the exports stood at a somewhat lower figure.
Exports by Country
The shipments of the four major exporters of fresh or chilled hams, shoulders and cuts of pig meat, namely Denmark, the Netherlands, Spain and Germany, represented more than two-thirds of total export. France (X tons) ranks next in terms of the total exports with a 5% share, followed by Belgium (4.6%). The following exporters - Poland (X tons) and Austria (X tons) - each accounted for a 4% share of total exports.
From 2012 to 2022, the most notable rate of growth in terms of shipments, amongst the leading exporting countries, was attained by Spain (with a CAGR of -1.0%), while the other leaders experienced a decline in the exports figures.
In value terms, the largest fresh pork cut supplying countries in the European Union were Denmark ($X), the Netherlands ($X) and Spain ($X), together accounting for 66% of total exports.
Spain, with a CAGR of -2.5%, saw the highest growth rate of the value of exports, in terms of the main exporting countries over the period under review, while shipments for the other leaders experienced a decline in the exports figures.
Export Prices by Country
In 2022, the export price in the European Union amounted to $X per ton, with an increase of 7.7% against the previous year. Overall, the export price, however, saw a mild shrinkage. The most prominent rate of growth was recorded in 2019 when the export price increased by 17% against the previous year. Over the period under review, the export prices hit record highs at $X per ton in 2013; however, from 2014 to 2022, the export prices stood at a somewhat lower figure.
Average prices varied noticeably amongst the major exporting countries. In 2022, major exporting countries recorded the following prices: in Poland ($X per ton) and Spain ($X per ton), while France ($X per ton) and Denmark ($X per ton) were amongst the lowest.
From 2012 to 2022, the most notable rate of growth in terms of prices was attained by the Netherlands (-0.5%), while the other leaders experienced a decline in the export price figures.
Fresh Pork Cut Imports
Imports in the EU
Fresh pork cut imports contracted to X tons in 2022, remaining relatively unchanged against the year before. In general, imports saw a relatively flat trend pattern. The pace of growth was the most pronounced in 2014 when imports increased by 5.7% against the previous year. Over the period under review, imports reached the peak figure at X tons in 2018; however, from 2019 to 2022, imports remained at a lower figure.
In value terms, fresh pork cut imports expanded sharply to $X in 2022. Overall, imports saw a slight curtailment. The most prominent rate of growth was recorded in 2017 when imports increased by 16%. The level of import peaked at $X in 2013; however, from 2014 to 2022, imports stood at a somewhat lower figure.
Imports by Country
Italy was the key importer of fresh or chilled hams, shoulders and cuts of pig meat in the European Union, with the volume of imports recording X tons, which was near 50% of total imports in 2022. It was distantly followed by Poland (X tons) and Germany (X tons), together making up a 25% share of total imports. The following importers - France (X tons), the Czech Republic (X tons), Slovakia (X tons), the Netherlands (X tons), Bulgaria (X tons) and Romania (X tons) - together made up 16% of total imports.
Italy experienced a relatively flat trend pattern with regard to volume of imports of fresh or chilled hams, shoulders and cuts of pig meat. At the same time, Slovakia (+11.1%), Romania (+3.2%), Bulgaria (+2.1%) and Poland (+1.1%) displayed positive paces of growth. Moreover, Slovakia emerged as the fastest-growing importer imported in the European Union, with a CAGR of +11.1% from 2012-2022. The Czech Republic and the Netherlands experienced a relatively flat trend pattern. By contrast, France (-3.6%) and Germany (-6.2%) illustrated a downward trend over the same period. From 2012 to 2022, the share of Italy, Poland and Slovakia increased by +4.5, +2.8 and +2.3 percentage points, respectively. The shares of the other countries remained relatively stable throughout the analyzed period.
In value terms, Italy ($X) constitutes the largest market for imported fresh or chilled hams, shoulders and cuts of pig meat in the European Union, comprising 48% of total imports. The second position in the ranking was taken by Poland ($X), with a 15% share of total imports. It was followed by Germany, with a 9.1% share.
From 2012 to 2022, the average annual rate of growth in terms of value in Italy was relatively modest. The remaining importing countries recorded the following average annual rates of imports growth: Poland (-0.4% per year) and Germany (-6.7% per year).
Import Prices by Country
In 2022, the import price in the European Union amounted to $X per ton, with an increase of 9.6% against the previous year. Overall, the import price, however, recorded a mild curtailment. The pace of growth was the most pronounced in 2019 when the import price increased by 20% against the previous year.
