Total exports indicated a prominent expansion from 2012 to 2021: its value increased at an average annual rate of +7.0% over the last nine years. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. As a result, the exports attained the peak and are likely to continue growth in the immediate term.

In 2021, Italy (X tons), Lithuania (X tons), the Netherlands (X tons), Poland (X tons), France (X tons), Germany (X tons), Latvia (X tons), Denmark (X tons) and Spain (X tons) represented the main exporter of caviar (sturgeon) in Europe, making up 84% of total export.
From 2012 to 2021, the most notable rate of growth in terms of shipments, amongst the key exporting countries, was attained by Poland (with a CAGR of +54.4%), while the other leaders experienced more modest paces of growth.
In value terms, the largest caviar (sturgeon) supplying countries in Europe were Italy ($X), France ($X) and Germany ($X), with a combined 63% share of total exports. The export price in Europe stood at $X per ton in 2021, picking up by 15% against the previous year. Export price indicated strong growth from 2012 to 2021: its price increased at an average annual rate of +8.2% over the last nine-year period. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2021 figures, caviar (sturgeon) export price increased by +43.8% against 2019 indices. The growth pace was the most rapid in 2013 an increase of 100%. The level of export peaked in 2021 and is likely to see steady growth in years to come.
There were significant differences in the average prices amongst the major exporting countries. In 2021, the country with the highest price was France ($X per ton), while Lithuania ($X per ton) was amongst the lowest.

The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2021 figures, imports decreased by -6.9% against 2017 indices. The pace of growth was the most pronounced in 2013 with an increase of 39%. The volume of import peaked at X tons in 2016; however, from 2017 to 2021, imports remained at a lower figure.

The following importers - the UK (X tons), Greece (X tons) and Poland (X tons) - each finished at a 7.1% share of total imports.
From 2012 to 2021, the biggest increases were recorded for Sweden (with a CAGR of +22.9%), while purchases for the other leaders experienced more modest paces of growth.
In value terms, the largest caviar (sturgeon) importing markets in Europe were France ($X), Germany ($X) and Spain ($X), together accounting for 45% of total imports. These countries were followed by Russia, Belgium, Latvia, the Netherlands, the UK, Lithuania, Sweden, Bulgaria, Greece and Poland, which together accounted for a further 29%.
The Netherlands, with a CAGR of +35.3%, saw the highest growth rate of the value of imports, among the main importing countries over the period under review, while purchases for the other leaders experienced more modest paces of growth.
Import Prices by Country
The import price in Europe stood at $X per ton in 2021, surging by 43% against the previous year. Overall, the import price continues to indicate a temperate increase. As a result, import price reached the peak level and is likely to continue growth in the immediate term.
Prices varied noticeably country of destination: the country with the highest price was Germany ($X per ton), while Poland ($X per ton) was amongst the lowest.
From 2012 to 2021, the most notable rate of growth in terms of prices was attained by the Netherlands (+34.8%), while the other leaders experienced more modest paces of growth.
