The German sausage market declined to $X in 2021, waning by -6.9% against the previous year. Over the period under review, consumption showed a relatively flat trend pattern. The most prominent rate of growth was recorded in 2020 when the market value increased by 5.9%. As a result, consumption reached the peak level of $X, and then reduced in the following year.
Sausage Production in Germany
In value terms, sausage production dropped to $X in 2021 estimated in export price. In general, production continues to indicate a relatively flat trend pattern. The most prominent rate of growth was recorded in 2020 with an increase of 7% against the previous year. Over the period under review, production attained the peak level at $X in 2013; however, from 2014 to 2021, production failed to regain momentum.

In 2021, the amount of sausages and similar products of meat exported from Germany shrank slightly to X tons, with a decrease of -4% compared with the previous year. Over the period under review, exports, however, recorded a relatively flat trend pattern. The pace of growth appeared the most rapid in 2019 when exports increased by 5.2% against the previous year. As a result, the exports attained the peak of X tons. From 2020 to 2021, the growth of the exports remained at a somewhat lower figure.
In value terms, sausage exports fell to $X in 2021. The total export value increased at an average annual rate of +1.3% from 2012 to 2021; the trend pattern remained relatively stable, with only minor fluctuations being recorded in certain years. The growth pace was the most rapid in 2020 with an increase of 9.5% against the previous year. As a result, the exports reached the peak of $X, and then reduced modestly in the following year.
Exports by Country
The UK (X tons), France (X tons) and Belgium (X tons) were the main destinations of sausage exports from Germany, with a combined 44% share of total exports. These countries were followed by Denmark, the Netherlands, Spain, Austria, Sweden, Romania, Ireland, Bulgaria, the Czech Republic and Portugal, which together accounted for a further 42%.
From 2012 to 2021, the biggest increases were recorded for Romania (with a CAGR of +9.5%), while shipments for the other leaders experienced more modest paces of growth.
In value terms, the largest markets for sausage exported from Germany were the UK ($X), France ($X) and the Netherlands ($X), with a combined 45% share of total exports. These countries were followed by Belgium, Denmark, Austria, Spain, Sweden, Romania, Ireland, the Czech Republic, Portugal and Bulgaria, which together accounted for a further 41%.
Among the main countries of destination, Romania, with a CAGR of +14.3%, recorded the highest rates of growth with regard to the value of exports, over the period under review, while shipments for the other leaders experienced more modest paces of growth.
Export Prices by Country
In 2021, the average sausage export price amounted to $X per ton, increasing by 2.4% against the previous year. Overall, the export price recorded a relatively flat trend pattern. The most prominent rate of growth was recorded in 2020 an increase of 13%. Over the period under review, the average export prices hit record highs at $X per ton in 2013; however, from 2014 to 2021, the export prices failed to regain momentum.
There were significant differences in the average prices for the major foreign markets. In 2021, amid the top suppliers, the country with the highest price was the Netherlands ($X per ton), while the average price for exports to Bulgaria ($X per ton) was amongst the lowest.
From 2012 to 2021, the most notable rate of growth in terms of prices was recorded for supplies to Romania (+4.4%), while the prices for the other major destinations experienced more modest paces of growth.

Imports into Germany
For the third consecutive year, Germany recorded growth in overseas purchases of sausages and similar products of meat, which increased by 4.7% to X tons in 2021. Overall, total imports indicated buoyant growth from 2012 to 2021: its volume increased at an average annual rate of +5.8% over the last nine years. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2021 figures, imports increased by +65.8% against 2012 indices. The most prominent rate of growth was recorded in 2017 when imports increased by 16% against the previous year. Imports peaked in 2021 and are likely to continue growth in the near future.
In value terms, sausage imports rose sharply to $X in 2021. Over the period under review, total imports indicated prominent growth from 2012 to 2021: its value increased at an average annual rate of +5.5% over the last nine-year period. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2021 figures, imports increased by +69.7% against 2015 indices. The growth pace was the most rapid in 2017 with an increase of 16%. Over the period under review, imports hit record highs in 2021 and are expected to retain growth in the near future.
Imports by Country
Austria (X tons), Italy (X tons) and the Netherlands (X tons) were the main suppliers of sausage imports to Germany, together accounting for 62% of total imports. These countries were followed by Poland, France, Hungary, Spain and Belgium, which together accounted for a further 29%.
From 2012 to 2021, the biggest increases were recorded for Poland (with a CAGR of +12.6%), while purchases for the other leaders experienced more modest paces of growth.
In value terms, Italy ($X), Austria ($X) and France ($X) were the largest sausage suppliers to Germany, together accounting for 65% of total imports. These countries were followed by the Netherlands, Hungary, Poland, Spain and Belgium, which together accounted for a further 30%.
Among the main suppliers, Poland, with a CAGR of +12.0%, saw the highest rates of growth with regard to the value of imports, over the period under review, while purchases for the other leaders experienced more modest paces of growth.
Import Prices by Country
The average sausage import price stood at $X per ton in 2021, rising by 5.3% against the previous year. Over the period under review, the import price, however, saw a relatively flat trend pattern. The most prominent rate of growth was recorded in 2020 an increase of 13%. The import price peaked at $X per ton in 2013; however, from 2014 to 2021, import prices remained at a lower figure.
There were significant differences in the average prices amongst the major supplying countries. In 2021, amid the top importers, the country with the highest price was Italy ($X per ton), while the price for the Netherlands ($X per ton) was amongst the lowest.
