The German soya sauce market contracted rapidly to $X in 2022, which is down by -19.8% against the previous year. In general, consumption, however, showed strong growth. Soya sauce consumption peaked at $X in 2021, and then dropped dramatically in the following year.

In value terms, soya sauce production shrank to $X in 2022 estimated in export price. Overall, production, however, recorded a temperate increase. The growth pace was the most rapid in 2018 with an increase of 128% against the previous year. After three years of growth, shipments abroad of soya sauce decreased by -6.5% to X tons in 2022. Over the period under review, total exports indicated prominent growth from 2012 to 2022: its volume increased at an average annual rate of +6.9% over the last decade. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2022 figures, exports increased by +49.4% against 2013 indices. The most prominent rate of growth was recorded in 2013 when exports increased by 30% against the previous year. Over the period under review, the exports hit record highs at X tons in 2021, and then fell in the following year.
In value terms, soya sauce exports dropped to $X in 2022. In general, total exports indicated strong growth from 2012 to 2022: its value increased at an average annual rate of +7.0% over the last decade. The trend pattern, however, indicated some noticeable fluctuations being recorded throughout the analyzed period. Based on 2022 figures, exports increased by +74.5% against 2015 indices. The growth pace was the most rapid in 2021 when exports increased by 36% against the previous year. As a result, the exports attained the peak of $X, and then shrank in the following year.
Exports by Country
Poland (X tons), the Netherlands (X tons) and Austria (X tons) were the main destinations of soya sauce exports from Germany, with a combined 60% share of total exports. Spain, France, the Czech Republic, Denmark, Switzerland, Belgium, Finland, Italy and Hungary lagged somewhat behind, together comprising a further 30%.
From 2012 to 2022, the biggest increases were recorded for the Czech Republic (with a CAGR of +28.3%), while shipments for the other leaders experienced more modest paces of growth.
In value terms, the Netherlands ($X), Poland ($X) and Austria ($X) were the largest markets for soya sauce exported from Germany worldwide, with a combined 50% share of total exports. Spain, France, Switzerland, Denmark, Belgium, the Czech Republic, Italy, Hungary and Finland lagged somewhat behind, together accounting for a further 38%.
The Czech Republic, with a CAGR of +24.6%, recorded the highest growth rate of the value of exports, in terms of the main countries of destination over the period under review, while shipments for the other leaders experienced more modest paces of growth.
Export Prices by Country
In 2022, the average soya sauce export price amounted to $X per ton, shrinking by -7.1% against the previous year. In general, the export price, however, continues to indicate a relatively flat trend pattern. The pace of growth appeared the most rapid in 2018 when the average export price increased by 9.6% against the previous year. Over the period under review, the average export prices hit record highs at $X per ton in 2021, and then reduced in the following year.
Prices varied noticeably by country of destination: amid the top suppliers, the country with the highest price was France ($X per ton), while the average price for exports to Poland ($X per ton) was amongst the lowest.
From 2012 to 2022, the most notable rate of growth in terms of prices was recorded for supplies to Spain (+9.7%), while the prices for the other major destinations experienced more modest paces of growth.
Soya Sauce Imports
Imports into Germany
In 2022, overseas purchases of soya sauce decreased by -5.8% to X tons for the first time since 2011, thus ending a ten-year rising trend. Over the period under review, imports, however, enjoyed a prominent expansion. The growth pace was the most rapid in 2017 when imports increased by 20% against the previous year. Imports peaked at X tons in 2021, and then contracted in the following year.
In value terms, soya sauce imports contracted dramatically to $X in 2022. In general, imports, however, enjoyed a buoyant expansion. The most prominent rate of growth was recorded in 2021 with an increase of 32%. As a result, imports reached the peak of $X, and then fell sharply in the following year.
Imports by Country
The Netherlands (X tons), China (X tons) and Japan (X tons) were the main suppliers of soya sauce imports to Germany, together accounting for 92% of total imports.
From 2012 to 2022, the most notable rate of growth in terms of purchases, amongst the main suppliers, was attained by Japan (with a CAGR of +13.8%), while imports for the other leaders experienced more modest paces of growth.
In value terms, the Netherlands ($X), China ($X) and Japan ($X) constituted the largest soya sauce suppliers to Germany, together accounting for 90% of total imports. Thailand and South Korea lagged somewhat behind, together accounting for a further 4.5%.
In terms of the main suppliers, South Korea, with a CAGR of +15.5%, saw the highest growth rate of the value of imports, over the period under review, while purchases for the other leaders experienced more modest paces of growth.
Import Prices by Country
The average soya sauce import price stood at $X per ton in 2022, reducing by -13.4% against the previous year. Overall, the import price continues to indicate a relatively flat trend pattern. The pace of growth appeared the most rapid in 2021 an increase of 12% against the previous year. As a result, import price reached the peak level of $X per ton, and then fell in the following year.
Average prices varied noticeably amongst the major supplying countries. In 2022, amid the top importers, the highest price was recorded for prices from the Netherlands ($X per ton) and Japan ($X per ton), while the price for China ($X per ton) and Thailand ($X per ton) were amongst the lowest.
From 2012 to 2022, the most notable rate of growth in terms of prices was attained by South Korea (+5.1%), while the prices for the other major suppliers experienced more modest paces of growth.
